looking down from the cabin to the beach, caraganas line the uneven big cement stairs, they are a dwarf pea shrub, they smell sweet like peas and they grow like weeds, they surround our cabin. They have seeds that look like tiny green pea pods with little beans inside I don't think you can eat them but in the late summer the pods dry and burst open while still on the trees and it is the coolest sound ever for days.

my great-grandpa chose this section of beach to build a cabin on when there were only 2 other cabins on the lake. The sand is real and there are some really pretty little rocks in it. Generations of my family have lost valuables in this sand, I lost a diamond ring, someday my cousins and I are going to rent a metal detector.

Bryan’s Pig Day

Food — Tags: , , — By Crust on June 18, 2009

I’m leaving for S’toon tomorrow, so I’ve been working to prep up the diamond for the opening on Friday.

B had told me that Voya was going to open the penthouse suite patio, and that he was going to be the cook on the roof. I was so sad that I was going to miss it as the pig is being roasted on Thursday the 18th, aka the day I’m going to Saskatoon, aka today as it is 2:26 am. I think he said that plates of pig and ribs with sides are going to be crazy cheap and anyone can come.

Today while I was preping at the diamond he called me and said that he had a whole pig brining. I made it happen and ran over there to take a pic. Then at 9 when I called it quits on the prep I went to Boneta and Bryan was there eating the most beautiful pigs head preparation I’ve ever seen with pigs brain capeletti. Travis made it, he is really something. Pig pig pig.

Learning rock fish

This is a pic from the day that Trav taught me rock fish. I was so into the moment and, not wanting to waste any of his time that I didn’t take a pic. I took this pic off of the Boneta website, someone must have snapped it when I wasn’t looking. Boneta has a new blog section on their website, I think it’s cool.

something

I feel like I haven’t had much to share these last few weeks. Then I thought of something. It’s just a small thing I learned at a stage I did on Saturday. I saw all of the halibut fillets in a big tub of brine. The chef said that he brines it for 2 hours in 5% salt water. It gives the fish more weight per portion, it seasons the fish, it extends the life of the fish, it firms up the meat slightly, and because halibut is prone to worms it sterilizes the meat by killing any worms. I had never seen this before and it seems pretty good. I might brine my rock fish.

Another cook who I trust very much once told me that at a sushi restaurant that he worked at they never froze the salmon for sashimi they just salted it a bit then rinsed it.

Trav, sous from Boneta taught me how to do rock fish today. He’s had all kinds, canary, rough eye, yellow eye…

Spiders are all around me, even on my towels this morning, and in the tub.

I’m still not in the kitchen, the diamond is still not open. I’m going back to Saskatoon for a visit soon. I can’t wait to see my family and go to the lake.

This past week I’ve been watching dvds of Twin Peaks and tying flies. I found Ben’s fly tying box and I’ve been teaching myself. I’ve been tying some crazy looking ones that probably won’t catch fish. I just love all the crazy feathers and fur that there is to use. Other than that I’ve been looking at fashion websites, my favorite is beadedeagle.

I like bees wax candles because they are natural. I’m trying to eat only ethical meat.

I’m moving to Strathcona to a place that has a porch and a sunny yard so that I can garden and have parties.

I really like going to wreck beach with my friend Heather.

I want to get a job.
